1 small Shallot, finely minced
1 T. honey (or more depending on how you prefer to balance your dressing)
1 T. Mustard
3-4 T. Apple Cider Vinegar
Freshly ground Blakc Pepper
Many glugs of quality Extra Virgin Olive Oil (I like Frantoia’s cold pressed Sicilian Olive Oil)
1. Mix all ingredients in a small glass jar. Tighten the lid and give it a good shake and presto–you’ve got salad dressing!
