This is the recipe that I keep in my back pocket for weekends when we don’t know what to make for dinner. While it’s easier to order take out, and I love all of the choices we have in our diverse neighborhood of Jackson Heights–if I plan ahead in the morning, we can be tucking into crispy on the outside, moist and tender on the inside, fried chicken for dinner.
The recipe is the Sam Sifton’s Buttermilk Fried Chicken and it’s almost perfect. I say almost because I had to make two small edits: 1. Added garlic powder–trust me, you will want to do this, 2. Swap out the old paper bag with a gallon size Ziplock bag–again, trust me, it’ll reduce the mess and clean up–sorry environment!
